"In 2017 I had the opportunity to edit the book La cocina en Puebla. Tradition and modernity of a heritage, I praise La Poblana cook. Now, again, I decided to go back to the old book and reissue the first kitchen manual printed in Puebla, entitled "La cocinera de todo el mundo, o la cocina sin cocinera : coleccion de las mejores y mas escelentes recetas ...", which was printed in 1844 by Juan N. del Valle. This work has allowed me, on the one hand, to show the culinary universe that was already present throughout the viceregal period in Puebla and in Mexico, the Creole cuisine, inheritance of a mixture between inputs and ways of cooking of Iberian origin with flavors and aromas of American ingredients; on the other hand, to offer historical references to show the cookbook or manual as a means of access to the modernity of culinary practices in our country, as a new way of registering, showing and disseminating the wealth of regional cuisine. In this sense, the printed cookbook became the privileged vehicle for local cuisines like the one in Puebla to transcend their areas of origin and become a national legacy." (our translation).
