This book deals with the exciting culinary history of Puebla and the origins of its world famous cuisine. The author details how pre-Hispanic ingredients have been combined with spices from Asia and Africa and techniques from Spain and other European countries to create a unique and exciting gastronomy of Puebla. This book includes a set of recipes taken from the from historical texts written since 1786. In order to develop the content of this book the author, Jesús Manuel Hernández, has studied the most relevant cookbooks published in Mexico and Puebla, consulted about 80 works from various countries, and conducted numerous interviews over the last 40 years. The result is a book that helps preserve the cultural heritage of the poblanos, by tracing the intersection of indigenous and international culinary practices that produced a cuisine that has become a central component of Poblano identity.
