The investigation that began in 2013 explains the meaning of the terms picantería and chichería. Both places, which date back more than three centuries, were spaces where people socialized in a family context accompanied by a good chicha, a good meal and a musical jarana. Tradition that until today exists thanks to the work of the woman picantera through the teaching inherited from the grandmothers to mothers, daughters and granddaughters. The book, which is divided into two volumes, continues to detail history, local culinary and a small gastronomic recipe from each region investigated, and then specifically explain the origin of its picanterías and chicherías.
